Substituting for half & half and whipping cream?

January 142010

I have a recipe for crab bisque that calls for 4 cups half & half as well as 1 cup of whipping cream. I’d like to lighten this recipe up. Can i use skim milk and evaporated milk instead? Any other ideas?

You can but it won’t be as thick, you may want to make a rue using 1 tablespoon of butter and 3 tablespoons of flour. Let cook for a few minutes to get the flour taste out of the product before slowly adding the skim & evaporated milk. I use that combination of substitutes when making mac and cheese and I find the recipe comes out just as good. And I get to enjoy guilt free:-)

skim milk – NO, evaporated milk may work, not sure….but if you have whole milk you can use that but it will not be as "creamy". for this dish I would stick with cream…sorry

What can i substitute for a 12 oz can evaporated milk? Can i just use skim milk?

I"m making pumpkin pie from scratch , & i don"t have evaporated milk. I can wait till tomorrow, but i"m too anxious to finish it today. Hope you can help with any tips.

Evaporated milk is thicker. One person recommends using dry milk powder with water — 2/3 cup non-fat dry milk to 3/4 cup water.

What do you put in your coffee???

October 272009

Nobody had better say skim milk…Do you also drink flavored coffee such as Hazelnut like me??I put evaporated milk & Spelnda in my coffee.

I use half and half in mine (not sure how much–enough that the coffee is sort of a dark cafe au lait color!). I like flavored coffee occasionally (the kind that has the flavor roasted into the beans–not the flavored creamers. I can’t stand sweet coffee!)

Chemistry homework problem Help!!!?

October 202009

Liquid A and liquid B are clear liquids. They are placed in open containers and allowed to evaporate. When evaporation is complete there is a white solid in container B but no solid in container A. From these results what can you infer about the two liquids.

Alright im thinking that liquid B is a mixture because it became a vapor and a solid. However im not sure if A is a mixture because it became a vapor. Is it a mixture or a substance?

Substance= material is fixed (silver)
Mixture=may vary ex.) milks(lowfat, cream, skim ect..)
I think that a is a substance because it the vapor is the same. It went through a physical change not a chemical one. So A is a substance B is a mixture. Correct?

Container B had a solvent dissolved in it which has a different boiling point which allowed it to be separated from the liquid that had evaporated. Container A contained one substance without a solvent or a solvent with the same boiling point. Both solutions where not over saturated because then you could see the solvent. So using your vocab A is a ‘mixture’ and B is a pure ’substance.’

Buckwheat pancakes on diet?

October 182009

On a diet, yes of course.

I have homemade BUCKWHEAT pankcakes i made for only breakfastes.
Buckwheat(which is wayyyy better then white flour)
I dont think theres egg yolks, i think i only put whites in it.
I used skim milk. I also put rolled oats in the pancakes, there about 3 or 4 inches wide.

I bought Vanilla syrup from an ORGANIC food store co op. Theres only 35 calories in 1 tbls. No calories in fat.
Theres 9 grams of sugar(id only have 1 or 2 tbls.)
1 or 2 pancakes.

Id only have this for breakfast. with a piece of fruit as i always do for breakfast.

I watch what i eat but i have these wonderful healthy pancakes i made in my freezer waiting to be served with my wonderful vanilla syrup :) theres only like 4 ingredients in the syrup. Vegitible something, evaporated cane juice and two other things, vanilla extract i think and something else. not bad tho.
I dont eat much sugar the rest of the day, i read lables, i eat fruits and veggies, 100% whole wheat rolls for subs or lunch sandwiches, low sodium deli turkey meat, lettuce. everything healthy cuz id like to lose some fat but yes, i dont drink pop, and i dont usually eat sweets, only on sunday do i get a treat like this sunday is 1 Oatmeal raisin weight watchers cookie w/dunkin doughnuts Nonfat latte lite with skim milk and no sugar. Thats my treat for sunday, i eat great the rest of the day and morning. Trying to make a better thinner me!

But yes, my pancakes please?
my question is, Can i have my 2 or 1 pancakes with my 1 or 2 tbls. of vanilla syrup? And it be a healthy breakfast with fruit?

Why would you go through all that when you can just eat a whole grain cereal or salad?

when can i feed my puppies ‘puppy formula’?

October 182009

theres six of them,
one of them (i’ve kept an eye on) keeps getting pushed; when
she tries to get some milk.

* also; is this a good formula? *

Bottle Feeding Recipe

11 Calories per CC

10 oz. of canned evaporated milk or goat’s milk (not pasteurized cow’s milk – this will cause scowers – dogs cannot drink normal cow’s milk) Goats milk is by far the best to use. Wall Mart sells it.

3 oz. sterilized water (baby water or boiled water) this is not needed if using goat’s milk

1 raw egg yolk

1 cup of whole yogurt (avoid skim or fat free if at all possible)

1/2 Tsp Karo Syrup or Corn Syrup (NOT HONEY !!!)

****If you cannot find Karo or Corn syrup where you live, you can do a Google search for “substitute for Karo syrup” and get some options.****

When I Googled “substitute for Karo syrup" here is what I came up with- 1 c Karo can be subbed with 1 c white sugar and 1/4 c hot water (cook it to dissolve in the water best you can get it to. Depending on the recipe, if you need the sugar to be completely dissolved you might need to add a bit more water).

Place ingredients in a blender and blend or use a wire whisk. Be careful to not over blend and create a milk shake full of bubbles and then tube bubbles into the puppy.

Keep cool and discard leftovers after 7 days.

Warm formula to body temperature (dogs are around 101 degrees). Discard any un-used formula. This is a thick mixture – use a stomach tube to tube feed or enlarge the hole in the nipple for easy access for the pup.

Yes that is a good formula. Goats milk is much better to use than evaporated milk for two reasons. 1) Goats milk is more digestible for many mammals. 2) Goats milk has digestive enzymes.
If you don’t use goats milk, make sure the yogurt has digestive enzymes

If pup can suckle from bottle, there is no need to tube feed. Its better for the pup to exercise its jaws by suckling. If he’s too weak, tube feed.

If you can supervise the pups every time they nurse, you can keep them from pushing small pup away. If you aren’t present each time pups nurse, use the formula.

Any pasta sauce ideas with my limited kitchen?

October 152009

Okay, so we have some leftover macaroni noodles that my sister and I are eating for dinner. We just need a sauce to go with them! We don’t want just butter tossed with the noodles, that’s boring and we’ve had it enough, so we need another idea. (We’re not opposed to a butter-based sauce, however).

This is what we have:
Most spices that you would find in a regular kitchen. We are out of OREGANO, though.
No vegetables. It’s depressing, really, but we don’t have any olives, mushrooms, stuff like that
No cream. We do have SKIM milk though, and I think we might have evaporated milk somewhere. Not certain though.
Not a lot of cheeses. Actually, I don’t think we really have any.

So basically we are limited to:
Spices
Chicken broth
Butter
Milk
White Wine (preferrably not tho)
Flour

So yeah, any ideas? Also, we don’t have any garlic. We have garlic powder and garlic salt though.

ALSO (Please answer!)
If a recipe calls for, say, 2 cloves of garlic, minced, how much garlic powder would that be similar to? Thanks so much, my sis and I appreciate it.

(Note: Going out and buying anything isn’t an option – the weather is horrible..)

No Parmesean cheese? That would be a plus.

Put butter in a sause-pan, melt it, add flour. Cook the flour for a few minutes, then add some milk and chicken broth — salt and whatever other spices you’d like. Thyme, maybe. Rosemary — whatever you want. And the garlic powder — it says on the jar how much equals a clove — probably no more than 2 cloves at most.

As I say, Parm would be nice — but any cheese could be melted in.

You don’t have NY veggies? Not even in the freezer? Just about anything would work: spinach, green beans — anything.

If you like heat, you could add that, as well (pepper flakes, or hot sause).

A little of that wine would dress it up, too. Dunno why you prefer not to.

But just taste it as you add things, and be creative.
